Spicy Chicken Tacos

Ingredients:
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons "KICKIN' CHICKEN RUB"
- 2 tablespoons olive oil
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onions
- 1/2 cup chopped cilantro
- 1/2 cup shredded cheddar cheese
- Sour cream (optional)
- Lime wedges (for serving)
Recipe:
- Preheat your grill or stovetop grill pan over medium heat.
- Rub the chicken breasts with olive oil and then coat them with the "KICKIN' CHICKEN RUB" mixture, making sure to cover all sides evenly.
- Place the seasoned chicken breasts on the preheated grill or grill pan. Cook for about 6-8 minutes per side, or until the chicken is cooked through and no longer pink in the center. Remove from heat and let it rest for a few minutes.
- While the chicken is resting, warm the flour tortillas on the grill or in a separate pan.
- Slice the cooked chicken into thin strips.
- Assemble your tacos by placing a few strips of chicken on each tortilla. Top with shredded lettuce, diced tomatoes, red onions, cilantro, and shredded cheddar cheese.
- Optionally, add a dollop of sour cream on top of each taco and serve with lime wedges for squeezing over the tacos.
- Sprinkle some "KICKIN' CHICKEN RUB" on the top.
