Sesame Herb Rice Bowl

Ingredients:
- 2 cups cooked white or brown rice
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup snap peas
- 200g firm tofu, cubed
- 2 tablespoons soy sauce or tamari
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 2 teaspoons Gourmet Inspirations Veggie Fusion garnish (or adjust to taste)
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Steps:
- In a bowl, marinate the cubed tofu with soy sauce or tamari. Let it sit for about 10-15 minutes to absorb the flavors.
- In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated tofu and cook until it's lightly browned and slightly crispy. Remove the tofu from the pan and set it aside.
- In the same pan, add another tablespoon of vegetable oil. Add the sliced carrots and cook for 2-3 minutes until they start to soften.
- Add the broccoli florets and snap peas to the pan with the carrots. Stir-fry the vegetables for another 3-4 minutes until they become tender-crisp.
- Return the cooked tofu to the pan and mix it with the vegetables.
- Drizzle sesame oil over the mixture and toss everything together to coat evenly.
- Add the cooked rice to the pan and gently stir-fry it with the vegetables and tofu, making sure everything is well combined.
- Sprinkle Gourmet Inspirations Veggie Fusion garnish over the rice bowl and mix it in thoroughly. This will infuse the dish with a burst of flavorful seasoning.
- Taste the rice bowl and adjust seasoning if needed, adding more Gourmet Inspirations Veggie Fusion garnish if desired.
- Once the flavors are well incorporated, remove the rice bowl from heat.
