Sesame Herb Rice Bowl

Ingredients:

  • 2 cups cooked white or brown rice
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 200g firm tofu, cubed
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 teaspoons Gourmet Inspirations Veggie Fusion garnish (or adjust to taste)
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Steps:

  • In a bowl, marinate the cubed tofu with soy sauce or tamari. Let it sit for about 10-15 minutes to absorb the flavors.
  • In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated tofu and cook until it's lightly browned and slightly crispy. Remove the tofu from the pan and set it aside.
  • In the same pan, add another tablespoon of vegetable oil. Add the sliced carrots and cook for 2-3 minutes until they start to soften.
  • Add the broccoli florets and snap peas to the pan with the carrots. Stir-fry the vegetables for another 3-4 minutes until they become tender-crisp.
  • Return the cooked tofu to the pan and mix it with the vegetables.
  • Drizzle sesame oil over the mixture and toss everything together to coat evenly.
  • Add the cooked rice to the pan and gently stir-fry it with the vegetables and tofu, making sure everything is well combined.
  • Sprinkle Gourmet Inspirations Veggie Fusion garnish over the rice bowl and mix it in thoroughly. This will infuse the dish with a burst of flavorful seasoning.
