Ratatouille with Garlic Lovers Seasoning Blend

 

Ingredients:

  • 1 large eggplant, diced into 1-inch cubes
  • 2 large zucchini, diced into 1-inch cubes
  • 1 red bell pepper, diced into 1-inch cubes
  • 1 yellow onion, diced
  • 2 tablespoons olive oil
  • 2 tablespoons Gourmet Inspirations "Garlic Lovers" seasoning blend
  • Salt and pepper to taste
  • 1 can (14 oz) diced tomatoes
  • Fresh basil, chopped (optional)

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the diced eggplant, zucchini, red bell pepper, and onion.
  3. In a small bowl, whisk together the olive oil and Gourmet Inspirations "Garlic Lovers" seasoning blend.
  4. Pour the garlic-olive oil mixture over the vegetables and toss until the vegetables are evenly coated.
  5. Transfer the vegetables to a large baking dish and spread them out in an even layer.
  6. Pour the can of diced tomatoes over the vegetables and stir gently to combine.
  7. Bake the ratatouille in the preheated oven for 45-50 minutes, or until the vegetables are tender and the tomatoes are bubbly.
  8. Serve the ratatouille hot, garnished with fresh chopped basil if desired.
