Ratatouille with Garlic Lovers Seasoning Blend

Ingredients:
- 1 large eggplant, diced into 1-inch cubes
- 2 large zucchini, diced into 1-inch cubes
- 1 red bell pepper, diced into 1-inch cubes
- 1 yellow onion, diced
- 2 tablespoons olive oil
- 2 tablespoons Gourmet Inspirations "Garlic Lovers" seasoning blend
- Salt and pepper to taste
- 1 can (14 oz) diced tomatoes
- Fresh basil, chopped (optional)
Instructions:
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the diced eggplant, zucchini, red bell pepper, and onion.
- In a small bowl, whisk together the olive oil and Gourmet Inspirations "Garlic Lovers" seasoning blend.
- Pour the garlic-olive oil mixture over the vegetables and toss until the vegetables are evenly coated.
- Transfer the vegetables to a large baking dish and spread them out in an even layer.
- Pour the can of diced tomatoes over the vegetables and stir gently to combine.
- Bake the ratatouille in the preheated oven for 45-50 minutes, or until the vegetables are tender and the tomatoes are bubbly.
- Serve the ratatouille hot, garnished with fresh chopped basil if desired.
