Fried Mashed Potato Balls
1 cup left over mashed potatoes
¼-½ cup shredded cheese of choice
1 egg
2 tbsp. Bread crumbs
Panko bread crumbs for breading
Grated parmesan and green onion for garnish (optional)
2-4 cups of vegetable oil for frying
Dipping sauce options:
- Gourmet Inspirations veggie fusion dip (use dry product and mix with sour cream and mayo)
- Chipotle mayo
- Pesto mayo
- Lemon mayo (mix Gourmet Inspirations sweet & Spicy lemon sauce with mayo)
Optional: Add bacon bits and chives.
Directions:
- Warm mashed potatoes just enough to handle with your hands.
- Mix in egg, and cheese and optional ingredients (feel free to be creative here!)
- Shape potato mixture into small balls.
- Roll in panko.
- Heat oil to med/high and fry balls until crispy on the outside.
- Place in 400F oven for 10-15 min. To ensure inside is fully cooked.
