Radish and Avocado Sourdough Toast

Radish & Avocado Sourdough Toast
Crunchy, creamy, peppery — this is the toast that earns its place on a brunch menu. Herbed cottage cheese keeps it interesting; thin-sliced radishes keep it pretty.

Ingredients

2 thick slices good sourdough bread

1 ripe avocado, sliced

4–6 radishes, sliced paper-thin (a mandoline is your friend)

1/3 cup cottage cheese (or sub whipped feta or cream cheese)

1 tbsp fresh dill, chopped (plus extra for garnish)

Olive oil, for drizzling
Method

Toast the sourdough until deeply golden on both sides.

While it toasts, stir the chopped dill into the cottage cheese.

Drizzle the warm toast lightly with olive oil.

Spread a generous layer of the herbed cottage cheese over each slice.

Fan the avocado slices across the top.

Shingle the radish slices over the avocado.

Tip: Soak the sliced radishes in ice water for 5 minutes if you want them extra crisp.
