Muffin Ingredients:
- 1 ¾ cups all-purpose flour
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 tsp baking soda
- 2 ½ tsp pumpkin spice
- 15 oz canned pumpkin purée
- ½ cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
Pumpkin Spice Cream Cheese Icing Ingredients:
- 4 oz cream cheese, room temperature
- 3 tbsp butter, softened
- 1 tsp vanilla extract
- 2 tbsp Gourmet Inspirations Pumpkin Spice syrup
- 1 cup powdered sugar
Muffin Instructions:
Preheat the Oven:
Preheat to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
Mix Wet Ingredients:
In a large bowl, whisk together granulated sugar, brown sugar, and oil until blended.
Add eggs, vanilla extract, and pumpkin purée. Whisk until smooth.
Combine Dry Ingredients:
In a separate bowl, mix flour, baking soda, and pumpkin spice.
Mix Together:
Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
