Land & Sea Grilled Salmon
Herb-crusted salmon on a bed of peppery greens with bright lemon
Serves: 2 · Total Time: 20 minutes

INGREDIENTS
• 2 salmon fillets (6 oz each), skin on
• 2 tbsp GI Land & Sea Seasoning
• 1 tbsp olive oil
• 2 cups mixed arugula and spring greens
• 1 lemon, half juiced for dressing, half sliced for garnish
• 1 tbsp extra virgin olive oil (for greens)
• Salt and pepper to taste
INSTRUCTIONS
1. Pat salmon fillets dry with paper towel. Brush with olive oil on both sides.
2. Generously coat both sides of each fillet with GI Land & Sea Seasoning. Press gently so it adheres. Let rest 5 minutes.
3. Preheat grill or grill pan over medium-high heat. Lightly oil the grates.
4. Place salmon skin-side up and grill 3–4 minutes until golden and releasing easily from the grill.
5. Flip and grill another 3–4 minutes until cooked through (internal temp 145°F / 63°C). For medium, pull at 130°F.
6. Toss greens with olive oil, lemon juice, and a pinch of salt.
7. Plate the greens, rest salmon on top, and garnish with a lemon wedge.
TIPS
★ Slice the salmon into medallions after grilling for a more plated, restaurant-style presentation.
★ Land & Sea Seasoning also works beautifully on shrimp, scallops, and chicken thighs.
