Lemon Dill Parm Smashed Potatoes (with Land n’ Sea)

1½–2 lbs small or medium potatoes

Olive oil, for drizzling

Freshly grated Parmesan cheese

Fresh lemon juice and dill, for serving
Instructions

Preheat oven to 420–480°F (215–250°C) with fan on.

Boil potatoes in salted water until fork-tender, about 20–25 minutes.

Drain and place on a lightly oiled baking sheet. Smash each potato using a glass or spatula.

Drizzle more olive oil over top and sprinkle generously with Land n’ Sea seasoning.

Roast for 30–40 minutes, until golden and crisp on the edges.

Flip potatoes, sprinkle with Parmesan, and return to the oven for 7–10 minutes until cheese is melted and crisp.

Finish with a squeeze of lemon juice and sprinkle of dill.
Tip: For extra crunch, broil the last few minutes before serving.
