Ingredients

  • 2 cups steamed white or brown rice

  • 1 tbsp Gourmet Inspirations Veggie Fusion garnish

  • 1 cup salmon poke (from Costco or homemade)

  • ½ cucumber, thinly sliced

  • ½ cup shelled edamame

  • ¼ cup seaweed salad

  • 1 green onion, thinly sliced

  • Sriracha, to taste

  • Kewpie mayo, for drizzle

Instructions

  1. Prepare steamed rice according to package directions.

  2. Divide rice between two bowls and top with 1 tablespoon of Veggie Fusion for crunch.

  3. Arrange salmon poke, cucumber slices, edamame, seaweed salad, and green onion over the rice.

  4. Drizzle with Kewpie mayo and sriracha to your desired spice level.

  5. Serve immediately and enjoy this fresh, balanced bowl!
